Horseshoe 19, afternoon
Hello, everyone!
[ Mami's standing at the ICP in the kitchen, and behind her it's easy to see that she's laid out some items on the counter. ]
The month's more than halfway over, and I realized we haven't taken full advantage of one of our culinary options this month! We have all the ingredients needed to make pizza!
[ Jazz hands. As a lover of all Italian cuisine...the basics are up there too! She then opens her notebook, and holds up a drawing she's done of a basic cheese pizza. ]
The best things about pizza are that it's easy to make, easy to eat, and customizable! We don't have the ingredients for every type of pizza under the sun, but there are lots of options! I've made a toppings bar and laid out some crusts if anyone wants to try it with me, and there's both marinara sauce and white sauce.
[ She holds up some of the toppings she's sliced: ham, bacon, onions, peppers, diced tomato, shrimp, bamboo shoots, various shredded cheeses...and pineapple. ]
I hope to see you! And...there are a few dear friends I'd like to see afterward, too.

Dough's a little tricky to toss.

Kitchen right? I can be there in a bit.

[ She's there, and she already has the dough portioned out neatly.]
Welcome to our little pizza kitchen.

You can toss it or just roll it. But, I promised to teach tossing. [He studies the portioned our dough and takes in the whole kitchen.] I’ll use the middle one. Been a short while since I did this.

[ Mami offers the rest of the dough, just mixed. She watches attentively. ]

Be careful not to get too much flour in it either. Once we get this stage done they need to be covered and rise for twenty minutes.
[He checks the bath he’s kneading one handed and nods again.] Need a bowl and towel for this one! Got any that got past this stage? That’s when the tossing begins.

[ She passes over the supplies, already watching like a hawk. She can do this...somehow! Yes. ]
Still working on the tossing.

He never moves them apart or opposite directions. He picks up the dough, fisting his right hand and keeping his left flat. He adjusts his arms then sends it up into the air in a gentle toss. He catches it mostly on his arms.] Don’t toss too high and always catch it more on your arms.
You don’t always have to toss it. [He turns the dough to its other side and slaps it lightly.] You judge how thick your dough is and make sure it isn’t thin or breaking. You’re shaping it!

[ She watches and stumbles a little at first, but there's a pattern to it. She picks up on it eventually. ]
Right. Nice and sturdy, enough to hold a full meal...
Speaking of. How do you like your pizza?

[Galo lays the pizza dough down and gently spreads it out.] Not a Burnish so I can’t give super specifics on the heat needed for that.

[ Time to decorate. Lightly, they don't want to overload it. ]
Heavy on the cheese, then?

What about you? What do you like on yours? [He moves to set up the other the way she likes but waits for her feedback.]
