[He puts the ball of dough in the bowl and covers it. He puts it aside and takes the dough that’s ready to be tossed. He dusts it lightly with floor and carefully flattens it. He doesn’t press down very hard. His touch is light and sure. He builds the edge but his hands always move together.

He never moves them apart or opposite directions. He picks up the dough, fisting his right hand and keeping his left flat. He adjusts his arms then sends it up into the air in a gentle toss. He catches it mostly on his arms.]
Don’t toss too high and always catch it more on your arms.

You don’t always have to toss it. [He turns the dough to its other side and slaps it lightly.] You judge how thick your dough is and make sure it isn’t thin or breaking. You’re shaping it!
